Nashville- here I come!!! :-)

GETTING SUPER EXCITED for our trip to Nashville tomorrow! I'm packing and just got in a last minute workout in tonight. :-)

I can't wait to meet some of the amazing women on our team who i've never met in person and get to spend time with my coaches and my brother and sister in law! 
heart emoticon Not only is this trip for business and to meet others who do what I do BUT my hubby and I will ALSO be celebrating our 6 year anniversary! heart emoticon

To those who know me, you know I wear my cowboy boots quite a bit when it's not 100 degrees LOL and have a ton of awesome country inspired fashion in my closet! I know it sounds funny because packing usually isn't fun, but i'm excited to put some outfits together and pack for this fun trip!!! Oh and this picture was taken back in NOVEMEBER! I'm now 20 pounds lighter than I was here in this picture! Excited to wear my cute country dresses and boots smile emoticon smile emoticon smile emoticon


 I can't believe I'm about to head to Nashville and I don't have a single person telling me that I can't!!! For several years, I had jobs that from the outside looking in looked AMAZING but they never were! One job, was in retail and if you know retail, that's all I have to say about that job! At another job, I was being micromanaged by someone who had no idea how to run a business and had no morals. I did not respect him or the company at all and am just SO proud to say that I'M FREE!!! I'm MY OWN boss and I couldn't be HAPPIER!!! 

I'm free to make my own schedule, work wherever and whenever I want all while inspiring people to lead better lives and help others create financial freedom for themselves and their families!  I'm doing what I love EVERY DAY and building my own empire and not working to build someone else's! My team is growing STRONG this year and i'm so proud of all we have accomplished and the connection we have with each other and the support we give each other. <3 We are family. 󾌩 #bossbabe

My tips on how to add a quick & super easy veggie to your lunch or dinner!!!

So many of my team members complain that they don't eat enough veggies. They make excuses like, "Oh, my husband cooks on the weekends and doesn't make veggies." This is NO EXCUSE guys!!! 

Make veggies a PRIORITY! You're body needs them!

Here is my QUICK and EASY tip for you:

I get the Birdseye brand green beans-french style or any frozen broccoli 

I cook both on the stove top…

Green beans take no time- super quick! Add a teaspoon or less depending on how much is in the pan of coconut oil, throw in green beans and cook on high until cooked! (Takes less than 5 minutes total!)

Broccoli, I do the same but add water and steam then melt coconut butter or olive oil on top after I put it on my plate...

I add sea salt and fresh crushed pepper to both! ;-)

----> As a part of the 21DayFix meal plan, I must eat 4 servings of veggies each day. So, I always start my day with Shakeology and add in some fresh spinach leaves (1 green). For lunch, I make a salad and add either egg or chicken breast (2 greens). For snack, I love snow peas or carrots with hummus (1 green). For dinner, I usually cook either the broccoli or the green beans above (1 green). This is how I make sure i get all my veggies in for the day! ;-)

Paula Deen's Cauliflower Crust Pizza

This veggie-packed, low-carb pizza is big on flavor. Add shrimp or chicken to boost the protein content and staying power. ;-)

10 min to prep
35 minutes to cook
4 servings

Ingredients

  • 2 cups cauliflower, grated (about 1/2 a large head)
  • 1 large egg, lightly beaten
  • 1 1/2 cup part skim mozzarella, shredded and divided
  • 2 tablespoons Parmesan cheese, grated
  • 1/4 cup tomato sauce, homemade or store bought (I have a great recipe here!)
  • 1 cup grape tomatoes, sliced in half
  • 2 cloves garlic, sliced
  • 1/4 teaspoon red pepper flakes, crushed
  • 1/4 cup basil leaves, for garnish


Preparation

Heat oven to 425°. Line a rimmed baking sheet with parchment paper.

Grate the cauliflower using a box grater until you have 2 cups of cauliflower crumbles. Place in a large bowl and microwave for 7-8 minutes, or until soften. Remove and let cool. Mix in the egg, 1 cup mozzarella, Parmesan cheese, and salt and pepper. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with non-stick spray and bake for 10-15 minutes, or until golden.

Top the pizza with the sauce, remaining mozzarella, cherry tomatoes, garlic, and red pepper flakes. Bake in the oven until melted and bubbly, another 10 minutes. Top with basil before serving.

My notes:  I must say....squeezing the water out is important...first time I didn't do it and it was "fork and knife" pizza....second time with squeezing out the water you could hold the slice in your hand. The trick to this crust is once you have put it in the microwave to soften it, let it cool then place the riced cauliflower in a clean dish towel and squeeze ALL the excess moisture out. Then mix in all the other ingredients and mix well. (I use my hands) I bake the crust @ 400 for 40 minutes then add the toppings and bake another 10.

Absolutely Delicious Loaded Cauliflower! A Dish The Whole Family Will Love!

You won't believe it's low carb!!! 

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins-I would use turkey bacon)
6 Tbs chopped Chives
1/2 cup Mayonnaise (I prefer mayo made with olive oil or avocado or coconut oil)
1/2 cup Sour Cream (I prefer 0% fat)
2 cups Colby Jack Cheese ( I prefer 2% Sargento cheddar)
8 oz container sliced mushrooms (optional)

Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 - 10minutes, drain and let cool.

In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese,mushrooms and cauliflower and mix well... place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted.
Top with remaining 3 chives and serve.

-----> Just like you all have, I have stretched many times in my life and have achieved many things because of a belief in myself and facing my fears.

As a child, it started performing on stage. I was a shy little girl and didn't want ANY PART of being up there BUT thanks to my momma, she kept me in dance and cheerleading and was forced to face my fear and years later, I was an absolute ham on stage and wanted everyone to look at me, FULL FACIALS AND ALL along with a BIG SMILE! LOL!

In high school, I was a straight A student except for science. It was always more of a challenge for me than math and english. I was a wiz at any kind of math and loved english---except for writing lol...my absolute least favorite thing! When it came time to deciding what to pursue in college, I wanted to CHALLENGE MYSLEF and decided my major would be Bio-Medical Science/ minor in Psychology. I knew it would be difficult for me but I REALLY WANTED TO HELP children and decided I would become a pediatric orthodontist.

While in some of the toughest classes I ever imaged and commuting and hour each way every day from home, I decided to try out for the Tampa Bay Buccaneer Cheerleading Team. This was quite SCARY for me! There were over 2500 girls trying out for just 28 spots! I knew I had a good chance since I had over 13 years of dance experience. I put EVERYTHING I had into that week of auditions and I MADE THE TEAM. It was a whirlwind cheering for 2 seasons, swimsuit calendars, visiting other countries and representing the Buccaneers organization all over the state of FL with events and tons of CHARITY events WHICH WAS SO REWARDING!

While cheering, I was offered so many great opportunities from my modeling agency's. I had to turn down a lot of BIG OPPORTUNITIES while cheering and under contract with the Bucs. So, after my second year cheering, I decided to take modeling and acting more seriously and worked in several movies and over 20 commercials as well as modeling companies such as Harley Davidson, Saks 5th Ave., Hanky Panky, HSN, etc. EVERY JOB I booked made me nervous and I always questioned whether I was good enough for the job BUT I showed up and gave my best.

THEN, A HUGE and SCARY opportunity came to me from one of my agencies and after an interview, I found myself traveling around the US speaking for BMW and all of their cars. This was an opportunity of a lifetime and I HAD TO TAKE IT. While traveling, I continued taking grad classes through UF and found it really difficult to keep up with the time changes and test dates so I finished up my first semester there and decided to put that on hold. I had realized that I was REALLY enjoying public relations and my job as a spokesperson for BMW and LOVED traveling.

A few years later, my husband and I moved a few hours away from home for HIS college job coaching baseball. I NEEDED a job while I was home and started teaching Chemistry NOT BY CHOICE then the following year decided I wanted to work closer to home and taught Math at an inner city school. Let's just say this was ONE OF THE BIGGEST CHALLENGES OF MY LIFE. Disciplining children was not my thing. I had no idea how to deal with such horrible behavior and found very quickly how much time it took and how much stress this job brought to my life...lesson plans every night, grading endless papers and getting there early for tutoring my kids that were having trouble every day and staying after too. I also was tutoring student athletes at the college and I found it very boring and couldn't wait for my next plane ride! I learned that TEACHING WAS NOT FOR ME!

I'm still on my journey and have found something I TRULY LOVE---> helping others! I'm dreaming big on this one and set my mind to HUGE GOALS for myself and my family and to hopefully one day be able to reach out and help others on a MUCH LARGER SCALE!!!

All of the effort, willingness to grow and wanting great things to happen in my life have all made me much more well rounded person. I don't regret anything. I have found that there is always something to learn from a failure and possibility to grow from it as well!!!

--->Thai flavored One Pot Pasta<----

Gather all the ingredients, put it in a pot, cook pasta all the way through and enjoy. It is just that simple for some of the most flavorful pasta dishes you have ever had!

Ingredients:

12 ounces linguine (I like Dreamfields)
4 cups reduced sodium vegetable broth
1/2 cup water
4 cloves garlic, thinly sliced
I tablespoon tamarind paste
1 tablespoon reduced sodium soy sauce (and/or fish sauce, if desired)
1/2 teaspoon red pepper flakes
2 inches of a ginger root, sliced into 1/4 inch slices
1 large carrot, peeled and cut in 1/4 inch by 2 inch pieces
1 red bell pepper, cut in 1/4 inch by 2 inch pieces
3 green onions, sliced in half lengthwise and then in 2 inch pieces
1 cup roasted salted peanuts
2 tablespoons peanut butter

Add at the end of cooking:
One small bunch of cilantro, diced (flat leaf parsley will work in a pinch)
Juice of two limes
one pot thai after

Optional garnishes:
Chopped peanuts
Mung bean sprouts

Place all ingredients except cilantro and lime juice and garnishes in a large stockpot. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until pasta is al dente and almost all liquid has evaporated – place about an inch of liquid in the bottom of the pot – but you can reduce as desired .

Season to taste with salt and pepper, stirring pasta several times to distribute the liquid in the bottom of the pot.

Remove slices of ginger and stir in cilantro and lime juice. Dish up the pasta and then sprinkle on garnishes as desired.

I know, I know....on my first attempt, I got sick and couldn't eat all of the food on my meal plan and literally couldn't breathe to workout due to asthmatic bronchitis. Cucumber Feta Rolls

Ingredients:

2 cucumbers
6 ounces crumbled feta (I use 2%)
3 tablespoons Greek yogurt (I love Fage)
2 1/2 - 3 1/2 tablespoons finely diced sundried tomatoes or red bell pepper
8 - 12 pitted kalamata olives, roughly chopped
1 tablespoon roughly chopped dill or oregano
2 teaspoons lemon juice
pinch of pepper, or to taste

Directions:

Thinly slice the cucumbers longways on a mandoline at a 2mm thick setting. Alternatively, you can use a vegetable peeler if you do not have a mandoline. Lay the cucumbers on top of a paper towel lined cutting board while you prepare the filling.

Add the feta and yogurt to a medium bowl. Mash to combine using a fork. Add the bell pepper or sun dried tomatoes, olives, dill, lemon, and pepper to the bowl. Stir well to combine. In a bowl, mash the feta using a fork.

Place 1 - 2 teaspoons of mixture at one end of a cucumber strip and roll up. Secure with a toothpick. Repeat with remaining strips. If not serving immediately, chill until ready to serve.

These are delish!

--> Grilled Peaches With Honey and Yogurt<--

Here's an easy summer dessert for under 100 calories!

Nothing says summer like biting into a juicy peach. Grilling them is a simple way to enjoy them as a dessert, a perfect ending to a backyard BBQ without heating up your kitchen. Delicious topped with yogurt and honey, but also great topped with low fat ice cream. 

Ingredients:

1/4 cup fat free vanilla Greek yogurt (I love Fage)
1/8 tsp cinnamon
2 large ripe peaches, cut in half (pit removed)
2 tbsp honey (I prefer local and raw tupelo)

Directions:

Combine yogurt and cinnamon.

Grill the peaches, covered on low or indirect heat until soft, about 2-4 minutes on each side.

Drizzle with honey and serve each with 1 tbsp of yogurt.

Perfection Isn't Key When Speaking of a Lifestyle Change...

We all want to know, how long will it take until I see results…

When you begin to follow the Eat Clean lifestyle, you will find almost immediately you have more energy and your skin and hair become lustrous and healthy looking. This is the first sign that you are making a positive change in your health.

Each person will experience a different rate of weight loss. This is due to a number of different factors such as starting weight, genetics, the implementation OF EXERCISE AND HOW MUCH YOU DEDICATE YOURSELF TO EATING CLEAN!!!!

Healthy weight loss occurs at a rate of 2 to 3 lbs per week. Some weeks you will lose more, and some weeks you will lose less and some weeks you might not see any movement at all. But don't let this discourage you! Have faith in the temporary stall and focus on the other positive changes that are taking place within your body!!!

Losing weight at a healthy rate has numerous positive benefits. It helps your skin adjust, which minimizes any excess skin you might have after you finish losing. Your heart, lungs and muscles also need a chance to catch up!

😁😁😁 So no workout today for me...

Came home from grocery shopping to a low blood sugar so waiting for it to get back in a good rangel...in the meantime, not feeling so great. 

How do others with Diabetes not take care of themselves??? It breaks my heart when I hear stories from diabetics loved ones about how their significant other is not monitoring their blood sugars, not eatin
g properly and just not caring about their health in general. It can be very detrimental to our organs to just let our sugars spiral out of control. I've actually lost my eye sight for a brief time right before I was diagnosed. It was a very scary time fearing I might not ever see again. Thank you God for being good to me! I can't imagine life with no sunsets and taking in all the beauty we are surrounded with.😁🙏

I spoke with both wives while out today running errands and asked them to have their husbands contact me so I could try to convince them why they need a Dexcom. I just can't sit back and not tell people about it. I just can't!

It has been such a blessing in my life.

It's black bean hummus ya'll! 

I'm in love! I've had other brands but this one is by far my favorite! 😍 Found it at Whole Foods. They have an array of other amazing ones! Another favorite is the vegetable hummus by Cedars!

Blueberry Banana Bread- I'm def gonna make this this weekend!!!

Servings: 16 • Size: 1 slice Calories: 98 • Fat: 2 g • Carb: 21 g • Fiber: 2 g • Protein: 2 g • Sugar: 13 g
Sodium: 87 mg • Cholest: 4 mg

Ingredients:

1 cup blueberries
3 ripe medium bananas, mashed
2 tbsp unsweetened apple sauce
1 1/4 cups white whole wheat flour (or Bob's Redmill AP GF blend)
3/4 tsp baking soda
1/4 tsp salt
2 tbsp butter, softened
1/2 cup (4 oz) light brown sugar, packed
2 large egg whites
1 tsp vanilla extract
baking spray

Directions:

Preheat oven to 350°F. Lightly spray a 8 x 4 loaf pan with baking spray.

In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and blend at low speed until combined, do not over mix. Fold in the blueberries and pour batter into the prepared loaf pans; bake in the center rack for about 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

My Tips For Starting Out A Morning Workout Routine...

~The main reason for writing this post is because this has been one of my BIGGEST struggles on my fitness journey and I wanted to share what has worked for me…


I recommend exercising in the morning for two reasons. First, it gets exercise out of the way before a million excuses start to form, before you get busy with your day and before your shower to start your day! In my opinion, this is a much easier fix than trying to find an hour in the middle of the day or at night. 

The second reason I like to exercise in the morning is it starts my day on a positive note. That 30 min to one-hour of exercise helps me stay focused and energized throughout the entire day. Feeling productive and accomplished is a priority for me. I need that. When I start my day with exercise, I feel productive, accomplished, and ready to take on the world. I truly enjoy my day more!!!



Here are 6 tips on how to start your exercise routine in the morning:

1.Pick a time that's realistic
I find it very tempting to set my alarm super early and just get up and start my workout immediately. However, this is not realistic for me. As a diabetic, I have to wake up and eat breakfast with protein before I start any form of exercise. A time that I can stick with is 7:30 am. This allows me to get the proper amount of sleep and still enough time for a solid workout. If you pick a time that you can never stick with, you will find it very difficult to create a routine and habit around that. Once you choose your time, don't let anything get in the way of that time- nothing else takes priority!

2. Get a good night sleep
Make sure you go to bed at a decent time to wake up at the time you have chosen to workout. This will help you get out of bed with ease and will ensure you have the energy for your workout. We need at least 7-9 hours of sleep to function at our best. My goal bedtime is 11:30. If I stay up any later, waking up will be a struggle for me in the morning! Be sure to take a few minutes to wake up before you start.

3. Lay out everything you will need for your workout by your bed the night before. Since you have set your time and made it a priority, you don't want anything to make you late to your workout, this includes looking for your clothes, shoes, earbuds, etc. As soon as you wake, put your workout clothes and sneakers on. By doing this it prevents you from talking yourself out of your "me" time.

4. Plan ahead! Know which workout you are doing the night before. Schedule your workouts like you do your meal planning. Know what you are going to do, for how long and which days are you rest days. If you do not have an exercise routine, reach out to me and i'll help you find one that fits your goals and lifestyle! All of my exercises are done in my home. Therefore, I don’t need to plan for travel time to a gym and my routine is already set up monthly for me day by day. I just follow the schedule that comes with my program made by certified personal trainers. If time is an issue for you, I highly recommend creating a home exercise routine in place of going to the gym. The take away point here is to wake up with a plan. Having your exercise routine in place beforehand will make all the difference with keeping you focused and following through.

5. Music is a key motivator
For me, the right music (something motivating & high energy) makes a huge difference to help not only get me pumped up for a workout but also to keeps me going throughout my workout. Some people like playlists but for me, that playlist gets old quickly and I don't have the time to always create new ones so I listen to Pandora…I have a few stations that I love and I stick with them. If you have a favorite station, please share with me below. I'm always looking for new music. wink emoticon

6. Exercise at Least 5 Days a Week
Make exercise a daily activity this way it won't feel like you're always starting over. If you make it a habit, your body and mind will get used to the activity and it won't be so difficult. Consistency is key! Trust me, it will be hard at first BUT give it time!
