Chicken Stir Fry- 21 Day Fix Approved!

Tonight's dinner plate. This was a lot of food to eat and so yummy! #21dayfixapproved

1 red (chicken, garlic, salt and pepper)
1 yellow (sliced and baked sweet potato)
2 green (frozen veggie mix stir fried with coconut oil)
1 orange (Asian Citrus Vinaigrette Dressing)


Recipe for the Asian Citrus Vinaigrette Dressing:
1/4 cup Trop 50 orange juice
1/4 cup rice vinegar
2 Tbsp reduced-sodium soy sauce
1/2-inch fresh ginger, peeled, finely grated
1/4 cup sesame oil

1. Combine all ingredients except oil and a medium bowl and whisk to blend.
2. Slowly add oil while whisking; mix well.

Be sure to store left over dressing in a covered container in the fridge. If dressing thickens when cold, hold at room temperature for 30 minutes and stir before serving.
