The Perfect Breakfast Casserole --->> Delicious Berry Oatmeal Bake Ya'll!

THIS you guys is one of my favorite breakfast recipes! So healthy and tasty! Every year I visit one of my best friends in Green Bay, Wisconsin. She always finds the best meals to put together when I'm there. This one one of my faves...we enjoyed it several mornings...perfect to grab & heat up! So simple and already prepped! Thanks Jennifer Wahlers for the recipe! ;-)

Berry Oatmeal Bake
Makes 6 servings
Ingredients:

2C Rolled Oatmeal
2 Large Bananas
1.5C milk (unsweetened vanilla almond milk or reg almond milk)
1C Berries, fresh or frozen (I prefer blueberries)
1.5C Water
1/4C Organic or local Honey (to taste)
1 Large Egg
1/4C Walnuts, chopped
Method
Preheat oven to 350 degrees and spray an 8x8 pan with nonstick cooking spray.
Line the bottom of your pan with sliced banana.
Then, evenly spread on 2C rolled oatmeal.
Next, sprinkle on 1C of berries.
In a medium sized bowl, mix together 1.5C milk, 1.5C water, 1/4C honey, and 1 egg. Then, pour on top of oats.
Finally, garnish the top with chopped walnuts.
Bake for 20-25 minutes, or until the oatmeal bake begins to firm up. (If you are using a glass pan, a good indicator that it is finished cooking is that the sides will be bubbling.)

Stacy's Crockpot Taco Salad.......yummy!

Tonight's dinner was a HUGE success!!!
I didn't use a recipe but knew I wanted taco's tonight so I just threw it all together in the crockpot and what a success!πŸ˜ƒ
Tons of flavor and most importantly, FAST AND EASY, 21 Day Fix approved and no cheese and STILL soooo yummy!!!
And I must say that I'm proud of myself because I'd normally put the chicken on taco shells and eat 3 or 4 but not now!!! This girl has goals! I put it all on top of THREE servings of greens! I did have a few organic Tostitos crushed up on top for some crunch!☺️πŸ™ŒπŸΌπŸ‘ŒπŸΌ

A MUST TRY RECIPE RIGHT HERE YA'LL!!! #organic #dairyfree #winning 



Ingredients:

1.5 pounds Organic Chicken Breast

1 large green pepper chopped

1 small can diced mild green chilis

reduced sodium taco seasoning

3/4 cup of water

Desired toppings: lettuce, tomato, cilantro, avocado, red taco sauce, organic tortilla chips


Directions:

Slice green pepper and place on bottom of crockpot.

Add uncooked chicken breast on top

Top with taco seasoning and water and diced green chilis

Let cook until chicken falls apart...can cook on low for several hours or high for a couple of hours.


Create your salad bowl and add in meat mixture to the top! ENJOY!!!

I served this fresh and delicious infused water with dinner tonight as a healthy alternative to sweet tea as my husband just suffered from a kidney stone! If you should decide to make it, be sure to squeeze the fruit before adding to the pitcher! If not, you won't get as much flavor in your water! ☺️ This is my absolute fave pitcher to keep my water in for the day. I usually refill at least once!

Oh and just a side note: If following the 21 Day Fix, count the meat mixture as a red and all the veggies in the salad green and if you add tortilla's, a yellow. ;-)

The Best Guacamole Recipe!

This is a 5 STAR recipe ya'll and one of my FAVORITES!!! ENJOY!!!


21 day fix, country heat, nutrition, appetizer, yum

--------> GUACAMOLE <---------
Ingredients
3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

About my Dexcom (Continuous Glucose Meter) and why I love it!

I've had several people messaging me this week about the details of my Dexcom continuous glucose meter so I'm sure there are more people out there would might like to know this.

Feel free to share with anyone you know who is suffering with Diabetes. This has changed my life. <3

It's wireless and easy to insert and you can wear it anywhere...arm, leg, stomach...I always wear it on my lower belly so that it's covered when I wear a bikini. I do switch sides though...I change it out every 1-2 weeks with a new sensor. The sensor reads to the transmitter which is attached to you like in the picture and the transmitter sends constant blood sugar readings to your receiver. You can set on the receiver at what ranges you want it to alert you and you can put it on vibrate or extra loud if you're outside where it's noisy. I have it set to alert me when it hits 80 and above 140. It keeps my A1C down and allows me to MANAGE my disease so much easier!!! I only have to prick my finger once every 12 hours instead of 7-8 times a day.

It alerts me when low or high and allows me to know when I should drink a juice to prevent a low or take insulin before I get too high. It tells you in which direction your blood sugar is moving and how fast with arrows. As you can see in the pic, my blood sugar is steady right now. It's pretty much the BEST THING EVER! It's crazy accurate!

You can swim with and get in the spa as well! I use a special tape which holds it on longer as it usually only stays on me without the tape for 2-3 days. The tape is called Hypafix and it's the best i've found. I even put it on before I put on the sensor so the adhesive on the sensor doesn't aggravate my skin. It's great and works perfectly!

I feel so much better when my Dex is in! All it takes is a glance to know where my blood sugar is and is great during workouts to prevent a low or a high! :-)

I can't tell people enough about this because of what it's done for me!

Donnie would tell you that he LOVES it too and now that I have the G5 (the newest model), he's able to watch my blood sugar throughout the day from his cell phone and I have it streaming through my apple watch too! it's been great while out and about and working out when you aren't normally carrying the receiver. WHAT A BLESSING. <3

A glimpse into my daily meal plan...21 Day Fix approved!

Here's my day in a nutshell -1200 calories




...3 green, 2 purple, 4 red, 2 yellow, 1 blue, 1 orange, 2 teaspoons 



I try to buy all organic especially meats. 

I'm always sure to drink at least 8 glasses of water a day...to know exactly how much water YOU need, take your weight and divide it by 2 and that's how many ounces your body needs daily.

Since I work from home most days, I don't really need to meal prep like most BUT I do find time on Sunday night to wash and cut all my veggies, grill some chicken and cut fruit and boil eggs for the week so there's less to do during the week when it's time to eat! 

Breakfast: 1 cup of herbal tea...this is my fave...no need to add ANYTHING!!!                              It has such an AMAZING flavor! 
Amazon, herbal tea, sweet & spicy, good earth, black tea, keurig, k cup, yummy, tea, favorite, breakfast

                 2 eggs over easy or scrambled (1 red)
                 1 slice of Ezekiel 4:9 grain bread (1 yellow)
                 1 medium orange sliced (1 purple)
                 1/4 Avocado seasoned with fresh cracked pepper & Himalayan sea                             salt

Pre-workout Snack: 2 boiled eggs (1 red)
                                 Pumpkin Seeds (1 orange)
                                 Pre workout (gives me energy to push hard through my 
                                 workout)




Lunch: Vegan protein Shake (1 red)
            almond butter or peanut butter 
            (2 teaspoons)


Afternoon Snack: JUICE (sooooo good for you!!!) (3 green, 1 purple)
                          

Green Juice Ingredients:
3/4 cups water (Put in blender first)

1 cup kale
1 green apple, cored
1/4 cup parsley leaves
1/2 medium cucumber
1 celery stalk, chopped
1 Tablespoon of lemon juice
OPTIONAL 1 (1/2-inch) piece of ginger, peeled 

A lot of times I'll need an extra fruit serving in my day so I'll add some frozen strawberries and banana to taste! It gives it a more smoothie like taste and texture ;-)

Equipment: juicer or blender and use a fine mesh sieve (optional if you prefer to not drink the pulp)


Dinner: grilled chicken or fish (1 red)
             brown rice or sweet potato (1 yellow) 
             Broccoli cauliflower mix (1 green)

Easy 4 Step Veggie Bowls

I love this concept because you can get very creative with this meal as there are so many different varieties you can make this one YUMMY!

The great thing about these meals is that these ingredients are SUPER EASY to prep for the week! I like to prep on Sunday night and make these for my lunches throughout the week! Yum right?! Who doesn't like SIMPLE?

Write down all the ingredients you would like for the week...maybe pick two different combos then head to the grocery to pick up your ingredients! If you'd like to add any meat, PLEASE be sure you buy organic! I know buying organic is not cheap but if you can only buy one thing organic, please choose meat!!! That's a whole other topic I'll try to touch on this week, but for now, just trust me!

Cook quinoa or brown rice
Cut up all veggies and cook any you want cooked
Make your homemade dressing
Rinse your beans

Combine each meal into the containers for the week and dressing on the side.

A DIABETES friendly option would be to substitute the rice or quinoa or a bed of lettuce and extra beans. ;-)

Hey guys! The original recipe is from the Food Network but I took it and made it my own! I tried the original recipe and just felt it needed so much more! The final product was so delicious and my hubby loved it!!! We ate on it for 3 days!
It will definitely be a staple in our home!

Ingredients:

3 (15.5-ounce) cans white beans
1 tablespoon olive oil
1 medium jalapeno pepper, minced
2 medium poblano peppers, chopped
1 large onion, chopped
4 garlic cloves, minced
Kosher salt and freshly ground black pepper
2 tablespoons ground cumin
1 1/2 teaspoons ground coriander
3 teaspoons chili powder (only half if you don't like spicy)
4.5 cups low-sodium chicken broth
2 limes, juiced, plus lime wedges, for serving
2 rotisserie chicken, skin removed and meat shredded
1/4 cup chopped cilantro leaves
0 fat Sour cream, for topping (I prefer Publix brand)
Organic blue corn tortilla chips, coarsely crushed, for topping


Directions:

Drain and rinse the canned white beans. In a medium bowl, mash half of the beans with a potato masher until chunky. Reserve the beans until needed.

Add the olive oil to a large Dutch oven and heat it over medium-high heat. Add the peppers, onions, and garlic and saute until soft and fragrant, about 5 minutes. Season the vegetables with salt, and pepper, to taste. Add the cumin, coriander, and chili powder and continue to saute for 1 more minute to toast the spices. Stir in the chicken stock, and lime juice and bring to a simmer. Add the beans and continue to simmer for 20 more minutes.

After 20 minutes of simmering, taste for seasoning, and adjust if necessary. Stir in the shredded rotisserie chicken and cilantro and simmer until heated through, about 5 more minutes. Serve the chili in individual bowls topped with a dollop of sour cream, crushed tortilla chips, and lime wedges.


Garnish with 2% Sargento cheese and jalapeno to your liking! I actually like to dice mine and cook them in the soup and garnish with cheese and sour cream! YUM! :-)
